What do you need for a Couscous Salad?
The thing that takes the longest time is to slice the vegetables. You’ll get the best result if you take the time to chop things into tiny pieces that fits the size of the couscous. For the salad you’ll need:
- 200 grams of uncooked couscous
- ½ a cucumber
- 2 tomatoes
- 1 pepper
- 1 tbsp chopped parsley
- Juice of ½ lemon
- 2 tbsp olive oil
- ½ teaspoon vinegar
- ½ teaspoon salt
- Freshly ground pepper
- Prepare the couscous by following the instructions on the box.
- Cut cucumber, tomato and pepper into small cubes.
- Season the salad with the rest of the ingredients. If you think the salad is too sour, you can add a teaspoon of sugar or honey.
- Let the salad steep in the fridge before serving.
